I cannot figure out how to search for Office 2016 application versions. The search seems to work. It shows 647 computers having version 16.0.4266.1001 but when I login to a random computer from the list to verify—because my patch isn’t working—it will actually be running a different version than what PDQ shows. So, then I’ll perform a search for the actual version that the computer shows is on there. It will yield 0 results. Like this in this case, I would search for 16.0.4549.1000 and get back nothing.
I noticed something though….the applications (word, excel, outlook etc..) have a different number entirely. So, If I am to go to control panel….look at the version installed—it does, indeed show 4266.1001. However, if you pull up any application, such as word, click the 'about'... it has a different version showing...as if the applications themselves didn't update. So, it’s likely not a PDQ issue, it’s an outlook not updating issue, if you follow what I’m saying.
I know I can configure custom file, registry, or WMI scans using Inventory...I am just not sure how to create this search. I suppose I would need it to search for outlook and microsoft word versions that are not 16.0.4266.1001

Don't think you can.
16.0.4266.1001 is the original installation version.
16.0.4549.1000 is the running patched version (I'm running patch 16.0.4738.1000).
Microsoft Office will always show the original installation version in programs and features. Office updates are managed with WSUS for our environment. I think that would be best.
You can try this method if you really need it to appear in PDQ.
Create a package to deploy the update, then copy a text file named after the version number. Create a collection that will look for the text file. If the file is not there, it needs patching and will not show in the collection.
