Do dynamic collections change throughout deployment?

Sorry if this seems like not the best way to deploy something, still very new to PDQ and trying to find my footing. I didn't seem to find this topic posted before, if it was I apologize and this can obviously be locked.
My organization has recently switched antivirus softwares and we are looking to roll out the change using PDQ. Basically what I have is a dynamic collection of all computers that have our current (now old) AV installed, and I have one that shows all our computers without an AV.
My current idea for my package is to deploy the new AV into the collection without any AV installed to make sure those have protection, uninstall the old AV from the collection that has the current software, then (and this is where I get unsure) deploy to that collection of no AV again to catch the new uninstalls and add the new software. My question is basically do dynamic collections update on the fly like that, or do I need to add a scan step, or is there a simpler way that I'm just missing? (Maybe nested packages? Haven't dug too deep in there yet.)
I'm trying to get it all down to one package so that I can add a heartbeat schedule so whenever a new computer comes online it'll be taken care of seeing as we have offices in different countries, it's hard to track everyone down to make sure they're online.

By default, packages are set to Scan After Deployment. That means that each computer will get scanned once its part of the deployment finishes. As long as you have the Scan Profile set to one that can detect the presence of your AVs, your collections will update automatically.
