If you just drop the server it breaks persistence for existing sessions - whether this causes an issue for the application or not is going to be application specific. If you disable the node then all existing sessions maintain persistence to that node until the session has finished, but no new sessions are directed to the node for paper help free. Once all traffic has been "drained" from that node (existing sessions have been completed) you can then take the server offline.
It's a more graceful way of removing a pool member without causing interruptions to users (depending on the application).
